Lunch to go:
Mock tuna salad; chickpeas mashed with vegenaise, mustard, pickle, seaweed.  Packed with olives, celery, lettuce and pickles.

Almond Cilantro Pesto:

1-2 Handful almonds soaked, large handful of cilantro, one lemon juiced, 2 cloves of garlic. Sunflower or olive oil.  Blended together or processed.  (I added water to my blender as needed to blend smooth.)

Served over a bed of Zucchini Noodles with sun dried tomatoes and sunflower seeds.  My boyfriend said this was one of the best things I’ve ever made.

Breakfast: green smoothie with apple, mango, spinach, mint and lemon
Lunch:  Salad (romaine and kale) with sun-dried tomatoes, cilantro, sunflower seeds, avocado, carrots, celery, eggplant bacon and (cooked) hummus.

Fresh out of the dehydrator - Pineapple and eggplant bacon!  I was hoping they would taste good together, Hawaiian pizza? but no, unfortunately. So I put together a BLT.  now all I need is raw mayo for my BLT.

Uploading pictures while drinking a mean green juice.  So wonderful, the air is spring like.  Got a lot of spring cleaning to do today. Picture 1: Dehydrated beets and carrots sprinkled with cinnamon.  Picture 2: sprouted quinoa tabbouleh salad with olives and sundried tomatoes and vegan feta cheese (the tofu said “sprouted” but this may not be raw). Picture 3: Dehydrated kale chips And Picture 4: sprouted mung beans to add to salad.
